I found a solution to send a confirmation email with the inputted information from the form to the email that the user inputted.

My workaround is using the Zapier integration of Google Sheets to send an email through Gmail. It allows you to pick the values individually, which helps if you don't want to send all of the values back to the user. You can format it in Plain Text or HTML through Zapier. Very helpful for me, so I thought I'd throw that out there.
